Healthy Breakfast Recipes

Breakfast is the most important meal, but you don’t want to load up on fatty junk foods like donuts.
If you start the day off with a healthy lowfat breakfast you’ll feel and perform better all day. Plus it will leave you less hungry and more apt to eat wholesome nourishing foods the rest of the day. Who knows, just one healthy breakfast could start you on a whole new way of eating!

Here’s some of our favorite healthy breakfast recipes:

Blueberry Muffins

1 Cup Natural or Raw Sugar
4 Cups Whole Wheat Pastry Flour
2 Cups Fresh Blueberries
4 Teaspoons Baking Powder
2 Teaspoons Baking Soda
1/2 Cup Soy Milk (Rice Milk Can Also Be Used)
2 Cups Soy Yogurt
4 Tablespoons Vegetable Oil


Directions:

Preheat the over to 350 degrees F. Combine the dry ingredients in a large bowl. Stir in the wet ingredients and mix thoroughly. Pour the batter evenly into 24 muffin holders. Bake 20 minutes or until a toothpick inserted into the center comes out clean.

Makes: 2 Dozen Muffins
Healthy Breakfast Cereal

Ingredients:

5 Cups Oatmeal
1/2 Cup Whole Rye Berries
1/2 Cup Whole Wheat Berries
1/2 Cup Sesame Seeds
1/2 Cup Brown Rice
1/2 Cup Buckwheat
1/2 Cup Flaxseed
Water

Directions:

Boil about 5 cups water (depends on how watery you like your oatmeal and you can use more or less). Mix the oatmeal, berries, seeds and buckwheat and add this mixture to the boiling water. Cook until the water is evaporated. Strain the cereal and lit it sit overnight. Reheat the next morning and enjoy!

Makes: 5 Servings
Lowfat Pancakes

Ingredients:

8 Egg Whites
2 1/2 Teaspoons Vanilla
2 Tablespoons Molasses
4 Teaspoons Natural or Raw Sugar
4 Tablespoons wheat flour
2 Teaspoons Cinnamon
1/2 Cup Oatmeal


Directions:

In a large bowl, mix the dry ingredients together. Add the wet ingredients to the dry and mix thoroughly. Cook pancakes in a nonstick skillet (you can use some PAM if you want).

Makes: 2 Servings
