There are many advantages to a vegetarian diet - for one it is more healthy without all the artery clogging fat of meat and since meat has a lot of calories, it can help you lose weight as well.
It used to be that there wasn’t much in the way of gourmet food for vegetarians, but these days you can find great meatless meals in most any restaurant.

But when your not eating out, you need to be able to prepare vegetarian meals the whole family will enjoy. Here’s some of our favorites:

Vegetarian Bean Soup

Ingredients:

2 Cups Dried Beans
1 Spanish Onions - Chopped
Sprinkle Of Black Pepper
1 1/2 Tablespoons BBQ Sauce
1 Clove Garlic - Chopped
2 Tablespoons Chilis - Chopped
1/2 Teaspoon Chili Powder
1/2 Teaspoon Lemon
3 Tablespoons Ketchup
1 28 Oz Can Stewed Tomatoes


Directions:

Drain the beans and soak them overnight. Before cooking the soup, redrain the beans and then boil them in 12 cups of water. Once the water is boiling, add the other ingredients. Simmer on low for 2 hours adding more water if necessary. Stir the soup every once in a while.

Makes: 3 Servings
Vegetarian Chipotle Chili

Ingredients:

1 Teaspoon Chili Powder
1 Green Pepper - Chopped
1 28 Oz Can Diced Tomatoes
3 Garlic Cloves - Chopped
1 Small Yellow Onion - Chopped
2 Different 15 Oz. Cans Of Beans
1 15 Oz Can Of Black Beans
2 Tablespoon Chipotle Chilis


Directions:

Combine all ingredients in a saucepan. Cook on low for 35 minutes. Add salt and pepper to taste. Continue to cook until vegetables are soft.

Makes: 2-3 Servings
Vegetarian Pita

Ingredients:

2 Cups Coleslaw
4 Jalapenos - Sliced
2/3 Cup Hummus
2 Tomato Slices
1 Large Pita


Directions:

In a small bowl, combine hummus, coleslaw, tomatoes and jalapenos. Spread the mixture on a piece of pita bread and enjoy!

Makes: 1 Serving
Vegetarian Teriyaki Wrap

Ingredients:

1 Cup Water
1/2 Cup White Rice
1 Tablespoons Olive Oil
1/2 Red Pepper - Chopped
1 Spanish Onion - Chopped
3/4 Cups Teriyaki Sauce
1 Teaspoons Garlic Powder
1 1/2 Tablespoons Soy Sauce
1/2 Teapsoon Ground Black Pepper
1/4 Teaspoon Salt
2 whole wheat tortillas


DIRECTIONS:

Bring the water to a boil and add rice. Meanwhile, saute the veggies in the teriyaki sauce. When the rice is cooked, strain it and add to the veggies. Add the remaining ingredients and stir until vegetables are soft. Serve on a tortilla with sour cream or other desired condiments.

Makes: 1 Serving
