Chocolate Pudding Frosting
Did you know you can make frosting from pudding?
That’s right and it’s rich and creamy too just like the pudding. This recipe uses the regular (not instant) pudding mix and is quick an easy to make. You can actually use any flavor pudding, so you could make butterscotch pudding frosting, vanilla pudding frosting or even pistachio pudding frosting. If you make the chocolate frosting, be sure to use the dark chocolate pudding.
CHOCOLATE PUDDING FROSTING
* 1/2 Package of Pudding Mix (4 oz pckg)
* 2/3 Cup Milk
* 1/4 Cup Butter
* 1/4 Cup Vegetable Shortening
* 1/2 Cup Confectioners Sugar, sifted
* 1/2 teaspoon Vanilla
* 1/2 teaspoon Salt
Measure out ½ of the package of pudding mix and cook as directed using 2/3 cup of milk.
Set in a bowl to cool and cover with waxed paper so that it doesn’t get a rubbery skin. Let it cool to room temperature.
Cream the Butter, Sugar and Shortening until light and fluffy.
Mix the vanilla and salt into the butter, sugar and shortening mix.
Gradually beat in the Pudding.
This recipe makes enough to frost a 9” round cake. It’s also great to use on a layer cake - just double the amount of ingredients and make as instructed.
