French Chocolate
French chocolate ranks high among the best chocolates in the world although it wasn't until 1615 that the
French court discovered chocolate in the form of a drink. In 1778 the first machine to mix chocolate was invented
by a Parisian and in 1825, the first chocolate factory was established in France.
French chocolate offers some surprising flavors such as lavender and chili flavored chocolate as well as chocolate containing
unusual fruits such as mango. Of course, the flavor subtleties and quality depend on the cocoa beans used in the making.
The best chocolates use a blend of beans each with different characteristics.
French chocolate is a source of pride for the country and the production of chocolate is strictly regulated.
No vegetable or animal fat is allowed - only pure cocoa butter. They also must be almost half cocoa liqueur although most
makers use even more than that which adds to the exquisite taste!
