Italian Food History
The history of Italian food dates back to the Roman empire where food was a very important part of the
culture. Since then Italian food history boasts regional traditions and foods. Italian food has
influenced many other countries, not the least of which is France.
When Hnery II married Catherine de Medicis in 1533 she brought her own cooks who influenced French cuisine.
Historically, Italian food gives claim to the first printed cookbook by Bartolomeo Platina in 1475 and the Italians were
the first in Europe to use the fork! They also were the first to present food dishes in courses which had a logical order.
They are also credited with bringing sweets and preserves to the western world
The history of Italian food is as diverse as the many regions of Italy. Meals, served in courses are the norm throughout
and the first course is typically pasta except for in the North where they favor risotto or polenta.
Meat is overshadowed by fresh vegetables, grains and beans in most regions.
While everyone uses olive oil, it is often found with a greenish color in the south and more golden in the north.

Historically, Italian food in the north of Italy has more meats such as Tuscan pork while the Parma is famous for cheeses and
Naples, of course for the ever popular Pizza. Seafood is incorporated in southern towns near the sea and fresh fruits and
vegetables are more predominant in the south.
